Organic "Black Skin" Ricotta
Our Ricotta Scorza Nera was one of only 17 cheeses entered into the "Gambero Rosso" Formaggi i Migliori d"Italia 2012, the Best Italian Cheese guide.
Organic, Aged 100 days, made from organic Sopravvissana sheep milk whey, salt and rennet.
After a short salting and drying, it is matured in the caves where it develops it's natural "black skin" mold.
This keeps it soft, rich and delicate, and has hints of spice, a touch of blue and the flavor of the caves.
